Appalachian Coppa Sliced

Coppa is a prized Italian cured meat recognized for its beautiful marbling. It is a whole muscle cut from the neck of local Black Duroc hogs. We’ve taken some southern liberties in our preparation by beginning with a cure of sea salt and brown sugar and washing it away in Tennessee whiskey. The meat is then coated in a generous paste of peppers grown in our garden, smoked, and hung to dry in our salumeria for four months. This charcuterie is great on charcuterie boards, sandwiches, or by itself. (4 oz. Sliced Pack)
